Vinification:
- Uncontrolled fermentation temperature
- Spontaneous fermentation with native yeasts
- Minimal sulphite addition
- Unfined
- Aged on lees for at least 6 months
Organoleptic properties: straw yellow with a lively mousse and persistent perlage. The aromatic character of Malvasia and Moscato stands out with floral and fruity notes of peach and pear, acacia honey and grapefruit, evolving over time into yeasty nuances. On the palate, dry and rounded, with a refreshing savoury edge and a pleasantly persistent bitter finish.
Food pairings: ideal as an aperitif, with seafood, cold cuts, and white meats. Also pairs well with simple desserts such as cakes and fruit tarts. Serving temperature: 8-10°C
