Vinification:
- Short maceration on the skins (approx. 8 hours)
- Uncontrolled fermentation temperature
- Spontaneous fermentation with native yeasts
- Minimal sulphite addition
- Unfined
- Aged on lees for at least 6 months
Organoleptic properties: brilliant deep rosé with ruby highlights and fine perlage. On the nose, aromas of ripe strawberry, wild berries, blueberry and rose, evolving into bready notes with time. On the palate, fresh, fruity, and persistent at first, developing into elegant toasted bitter almond nuances with a hint of tannin and alcohol.
Food pairings: excellent as an aperitif with cold cuts and gnocco fritto, but pairs well also with bold flavours such as blue cheese and marinated eel.
