The art of winemaking
It’s impossible to speak of Emilia’s heritage without mentioning wine – and in particular, Lambrusco.. That’s why our dairy has made the sale of typical and organic wines one of its greatest strengths.
We work with expert wineriesthat oversee every stage of the winemaking process. Grapes are carefully selected, harvested, destemmed, and gently pressed at the right time. Once the must has been separated from skins and seeds, fermentation takes place in dedicated vessels, which help define each wine’s organoleptic properties. The final stage of maturation, namely ageing, is carried out in constantly monitored cellars to ensure the wine develops into a complex, full-flavoured product.
