Vinification: early hand harvest in mid-August, before ripeness, ensures optimal acidity. Grapes are then destemmed, fermented in temperature-controlled tanks, and finally undergo secondary fermentation in autoclaves.
Sugar: 9 g/l – Total acidity: 7.5 g/l.
Tasting notes: bright straw yellow with fine, persistent perlage. Aromas of fresh herbs, pineapple, citron, and a hint of anise. Fresh, elegant, and well-balanced on the palate, with a long fruity finish.
Food pairings: tortelli reggiani with butter and sage, seafood salad, steamed white fish.
