Spongata is an ancient baked cake typical of Reggio Emilia, Brescello, and Parma. Its exact origins are uncertain, but similar recipes are thought to date back to the Middle Ages.

Round in shape, the cake is covered with sweet shortcrust pastry and dusted with icing sugar. Inside, it has a soft, sweet filling with a lightly spiced aftertaste.
