Exceptional Parmigiano Reggiano

The beating heart of our dairy since 1937, our Parmigiano Reggiano is exclusively made with fresh milk from local farms.. The process begins with milking, carried out strictly according to traditional methods. Once production is complete, wheels are placed on wooden shelves to mature in temperature and humidity-controlled ageing rooms. Each wheel is regularly cleaned, turned, and inspected to encourage the natural development of the rind and enhance its organoleptic qualities.

The ageing period ranges from a minimum of 12 months to well over 36 months, with our selection also including extra-aged varieties of 48 months. At 12–18 months, Parmigiano Reggiano has a delicate flavour and a soft, slightly elastic texture, making it ideal for grating over pasta or salads. At 24 months, the taste becomes fuller, the texture grainier and crumblier, perfect when paired with wine and dried fruit. Ageing for 36 months or longer makes Parmigiano Reggiano exceptionally rich and intense, an outstanding choice for gourmet dishes and tastings.
