Lobster Seal – Affinato (over 12 years)
Still rich in acidity, Lobster Seal vinegar develops bold aromas from the different woods used in the barrels. Less sweet than the other varieties, it is well suited to brief cooking. Ideal for enriching sauces, gravies, marinades, and fresh vegetables. Minimum ageing: 12 years.

Silver Seal – Affinato (over 15 years)
With an intense, rich bouquet and a flavour leaning towards sweetness, Silver Seal vinegar is perfect used raw in a wide range of sweet and savoury dishes. In first courses, its flavour pairs beautifully with starches. Its long ageing also makes it ideal for foie gras, boiled meats, fish dishes, as well as spicy and mature cheese – above all, Parmigiano Reggiano.

Gold Seal – Extra Vecchio (over 25 years)
Rich in aromatic notes, Gold Seal vinegar stands out for its exceptionally long ageing. Best enjoyed strictly raw, it is an elegant and refined complement to both sweet and savoury dishes, but it can also be savoured on its own. Minimum ageing: 25 years.
